  Cheesecake Brownie Bars


These Cheesecake Brownie Bars combine layers of fudgy brownies, creamy cheesecake, Oreos, chocolate ganache, and chopped Snickers bars for a decadent, irresistible dessert.


Ingredients:

For the Brownie Layer:

4 large eggs 🥚

2 cups sugar 🍬

8 oz melted butter + 2 tbsp for greasing the pan 🧈

1 cup cocoa powder, sifted 🍫

1 tsp vanilla extract 🍦

1 cup flour, sifted 🌾

½ tsp kosher salt 🧂

For the Cheesecake Layer:

16 oz cream cheese, room temperature 🧀

½ cup sugar 🍬

1 egg 🥚

1 tsp vanilla extract 🍦

20 Oreos, whole 🍪

8 Oreos, chopped 🍪

For the Chocolate Ganache:

10 oz dark chocolate 🍫

4 Oreos, chopped 🍪

10 mini Snickers, chopped 🍫🍬

Directions:

1️⃣ Preheat the Oven & Prepare the Pan:


Preheat your oven to 350°F (175°C).

Line a 9x12 or 9x13 inch baking pan with parchment paper, leaving some paper hanging over the edges for easy removal. Butter the parchment or spray with baking spray.

2️⃣ Make the Brownie Layer:


In a mixing bowl, beat eggs until fluffy and light yellow.

Add sugar and mix until combined.

Add the melted butter, cocoa powder, vanilla extract, flour, and kosher salt, mixing until just combined.

Pour the brownie batter into the prepared pan.

Top the brownie layer with 20 whole Oreos and set aside.

3️⃣ Make the Cheesecake Layer:


In a separate bowl, beat together cream cheese, sugar, egg, and vanilla extract until smooth.

Pour the cheesecake mixture over the Oreos.

Sprinkle the top with the 8 chopped Oreos.

Bake for 40-50 minutes until the cheesecake is set and golden brown around the edges. Rotate the pan halfway through for even baking.

4️⃣ Make the Chocolate Ganache:


Bring a pot of water to a simmer.

Place the dark chocolate in a heatproof bowl over the simmering water (make sure the bowl doesn’t touch the water). Stir occasionally until melted and smooth.

Pour the melted chocolate over the cheesecake layer.

5️⃣ Garnish:


Immediately top with chopped mini Snickers and crushed Oreos.

6️⃣ Cool & Set:


Let the bars cool to room temperature, then refrigerate for at least 6 hours to firm up.

7️⃣ Serve:


Once chilled, lift the dessert out of the pan using the parchment paper.

Cut into bars and enjoy!
