Grilled Garlic and Herb Chicken with Veggies
Ingredients
4 boneless, skinless chicken breasts
3 cloves garlic, minced
2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)
1/4 cup olive oil
1 tablespoon lemon juice
Salt and pepper to taste
For the Veggies:
1 zucchini, sliced into rounds
1 red bell pepper, cut into large chunks
1 yellow bell pepper, cut into large chunks
1 red onion, cut into wedges
1 cup cherry tomatoes
2 tablespoons olive oil
Salt and pepper to taste
Instructions
▶️1. Prepare the Marinade: In a small bowl, mix the minced garlic, chopped herbs, olive oil, lemon juice, salt, and pepper.
▶️2. Marinate the Chicken: Place the chicken breasts in a zip-top bag or shallow dish, and pour half of the marinade over the chicken. Coat the chicken well, seal the bag (or cover the dish), and refrigerate for at least 30 minutes to 2 hours for best flavor.
▶️3. Season the Veggies: In a large bowl, toss the zucchini, bell peppers, red onion, and cherry tomatoes with olive oil, salt, and pepper.
▶️4. Preheat the Grill: Heat your grill to medium-high heat.
▶️5. Grill the Chicken and Veggies:
Place the chicken on the grill and cook for 6-7 minutes on each side or until fully cooked.
At the same time, place the veggies in a grill basket or directly on the grill and cook for about 8-10 minutes, stirring occasionally, until tender and slightly charred.
▶️6. Serve: Slice the chicken and serve with the grilled veggies on the side.
Tips
For added flavor, baste the chicken with any remaining marinade while it’s grilling.
You can substitute or add other vegetables like mushrooms, asparagus, or even corn on the cob.
