Lemon Poppyseed Pound Cake

- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar

- 2 tablespoons poppyseeds
- 1 teaspoon vanilla extract

- 1 cup powdered sugar
- 2-3 tablespoons fresh lemon juice

1️⃣. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a loaf pan, or line it with parchment paper for easy removal.
2️⃣. Prepare the Batter: In a medium bowl, whisk together flour, baking powder, and salt. Set aside. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in sour cream, lemon zest, lemon juice, and vanilla extract.
3️⃣. Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the poppyseeds.
4️⃣. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
