1️⃣ Preheat and Prepare:
Preheat your oven to 325°F (163°C). Line a muffin tin with cupcake liners for easy removal and a polished presentation.
2️⃣ Make the Crust:
In a medium bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined. Press about a tablespoon of the mixture firmly into the bottom of each cupcake liner to create a crust. Bake for 5 minutes, just until set. Set aside to cool.
3️⃣ Prepare the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese and 1/2 cup of sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and heavy cream, mixing until fully combined and smooth.
