 Ingredients:

For the pancakes:

- 1 cup all-purpose flour

- 1/2 cup pumpkin puree 🎃

- 1/4 cup milk 🥛

- 1 egg 🥚

- 1 tsp baking powder

- 1/2 tsp baking soda

- 1/2 tsp salt 🧂

- 1 tsp dried sage 🌿

- 2 tbsp sugar

- 2 tbsp melted butter

For the blackberry sauce:

- 1 cup fresh or frozen blackberries 🍇

- 1/4 cup sugar

- 1/2 cup water 💧

- 1 tsp lemon juice 🍋

Directions:

1. In a mixing bowl, combine the flour, baking powder, baking soda, salt, sugar, and dried sage. 

2. In another bowl, whisk together the pumpkin puree, milk, egg, and melted butter until smooth. 

3. Pour the wet ingredients into the dry mixture and stir gently until just combined—don't overmix! 

4. Heat a non-stick skillet or griddle over medium heat. 

5. Pour 2 tablespoons of pancake batter onto the skillet for each pancake. Cook until bubbles appear and the edges look set, about 2-3 minutes, then flip and cook until golden brown, about 1-2 minutes more. 

6. For the blackberry sauce, place blackberries, sugar, water, and lemon juice in a small saucepan over medium heat. Cook until the berries break down and the sauce thickens, about 5-10 minutes. 

7. Serve the warm pancakes drizzled with the delicious blackberry sauce!
