Raspberry Tiramisu Recipe

- Ingredients
2 egg yolks
2 1/2 tablespoons sugar
1/2 teaspoon vanilla extract
1 cup mascarpone cheese, at room temperature
2/3 cup heavy cream
5-6 ladyfingers
1/4 cup cold-brewed coffee
1 1/4 cups fresh raspberries
Cocoa powder, for dusting

Prepare the Egg Mixture:
In a heatproof bowl, combine the egg yolks and sugar. Mix until the mixture turns pale yellow.
Place the bowl over a saucepan of simmering water, ensuring the water doesn't touch the bowl. Cook on low heat, stirring and whisking constantly for about 5-7 minutes, until the mixture thickens and forms a ribbon trail when the whisk is lifted.
Remove from heat and allow to cool slightly.
Add Vanilla and Mascarpone:
Whisk in the vanilla extract.
Gradually beat in the mascarpone cheese until smooth and well combined.
Whip the Cream:
In a separate bowl, whip the heavy cream until stiff peaks form.
Carefully fold the whipped cream into the mascarpone mixture, ensuring you don’t deflate the cream.
Assemble the Tiramisu:
Using a pastry brush, lightly brush each ladyfinger with cold-brewed coffee and cut them into 3-4 pieces.
In two serving glasses, place a layer of the coffee-soaked ladyfingers at the bottom.
Add a layer of the mascarpone mixture followed by a layer of fresh raspberries.
Repeat the layers, finishing with a layer of the mascarpone mixture on top.
Chill and Serve:
Dust the top with cocoa powder.
Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
